Citrus + Goat Cheese Salad with Truffle Honey

Now that the cold weather has (mostly) gone away and Spring has (hopefully) decided she's here to stay, I find myself being drawn to lighter, healthier food options (as opposed to the heavy foods I am always drawn to in the winter months while I am hibernating. Ha!). I've always loved a salad for lunch and have been trying out some new flavors to mix things up from my normal go-to ingredients. Cue the citrus.

If you follow along on Instagram, I mentioned a few days ago that I have had a long time love affair with orange juice as it has been my morning beverage of choice for years, but I haven't ever really eaten a ton of fresh citrus. Lately, however, my toddler and I have been eating a lot of tangerines or mandarins as an afternoon snack (such an easy, healthy, on-the-go option for parents!) and it got me thinking about experimenting more with these delicious flavors in my everyday cooking and recipes.

This colorful salad is simple, refreshing and sweet. It's perfect for spring, and it's so pretty to look at, too! I just love the combination of flavors. The truffle honey is what does it for me, honestly. I used this one, which is an acacia honey infused with white truffles, but you could use another variety if you wanted. You could also use other varieties of oranges and citrus if you prefer their flavors better. Read the full recipe below and leave me a comment if you try it!

Citrus + Goat Cheese Salad with Truffle Honey

Prep Time: 10 minutes | Total Time: 10 minutes | Serves: 2 as meal or 4 as side

INGREDIENTS:

  • 6 oz. baby spinach or spring mix
  • 4 oz. Goat Cheese
  • 1/2 Grapefruit (peeled and sliced horizontally into rings)
  • 1 Navel Orange (peeled and sliced horizontally into rings)
  • 1 Common Orange (peeled and sliced horizontally into rings)
  • 1/2  Blood Orange (peeled and sliced horizontally into rings then separated into wedges)
  • 2-3 Tbsp. Truffle Honey
  • Freshly cracked pepper to season

DIRECTIONS:

Assemble salad in large bowl. Layer greens with citrus slices and then goat cheese. Lightly toss. Drizzle salad with truffle honey and lightly season with freshly cracked pepper. Serve immediately.
